PHO 25: Authentic and Addictive Vietnamese Pho

In Vietnam, there is a legendary delicacy - Pho.
However, there are not many families who can cook the perfect pho, as it requires mastery of the skills of stewing soup, selecting ingredients and matching spices.

Because of this, pho has been selected many times by CNN as one of the "50 Most Delicious Foods in the World", including in 2011 and 2018, reflecting its status in the international food world.

The founder of PHO25 has had a special liking for pho since she was a child. During her college years, the founder embarked on a journey to find the secrets of pho. She visited the north, center, and south of Vietnam and tasted countless pho dishes.
Although the food was delicious, she always felt that it was missing that key ingredient. This obsession delayed her plan to open a restaurant for more than ten years.

During the Lunar New Year of 2023, the founder returned to her hometown and visited a hermit in her clan, a 90-year-old elder. She told the elder about her many years of searching for flavors. After listening, the elder pondered for a moment and suddenly said, "We are destined to meet." Then, he turned back to the room and took out a yellowed piece of paper from an old box.

This is a recipe from the Royal Chef in 1925. Although many words are blurred, the founder is still very excited. After bidding farewell to the elders, the founder went home without stopping and began to test the manuscript.

Since the text on the manuscript was difficult to decipher, she could only rely on experience and intuition, and kept trying and adjusting.

The process was full of challenges and setbacks. She tried countless times and failed again and again, but each failure brought her one step closer to success. After three months of repeated experiments, she finally succeeded in recreating this authentic pho recipe. This recipe not only satisfies her pursuit of perfect pho, but also carries the deep emotions of history and culture.

In 2024, PHO25 officially opened in Da'an District, Taipei City, realizing the founder's dream that had been delayed for ten years.

The founder's eyes were filled with tears and joy when he recalled the moment he successfully reproduced the ancient recipe for the first time.

She knew that this was not only her personal victory, but also a tribute to her family and culture.

The founder personally selects every ingredient, from premium beef bones to fresh beef and spices, all of which are carefully selected.

She insists on using the traditional method to cook the soup base for 25 hours, so that each bowl of Pho retains the rich and profound taste. In addition, the founder also pays special attention to the dining experience of customers. She hopes that every customer who comes to PHO25 can feel the warmth and care of home. The decoration of the store combines Vietnamese traditions with modern design elements to create a dining environment that is both warm and full of cultural atmosphere.
